Chocolate Covered Strawberries

These Chocolate Covered Strawberries are so delicious, I could eat every last one all by myself! So pretty, dipped in Ghirardelli white chocolate and decorated with a drizzle of royal icing, this is such an easy recipe!

We love strawberries and they are so good for you. We put berries in our breakfast dishes a lot, like our mixed berry scone recipe, fruit parfait recipe, and our healthy baked oatmeal.

Desserts with berries are also always so good! This lemon poke cake with blueberries is heavenly.

These chocolate-covered strawberries would be a special treat for so many occasions; Easter, a baby shower, or any party where you want to bring a festive but easy dessert that won’t keep you in the kitchen all day. White chocolate strawberries with red icing for Valentine’s Day would be so festive, too.

These Ghirardelli Chocolate Berries are so delicious, I could eat every last one all by myself! So pretty, dipped in Ghirardelli white chocolate and decorated with a drizzle of royal icing, this is such an easy recipe! These would be a special treat for so many occasions, like Easter, a baby shower, or any party where you want to bring a festive but easy dessert that won't keep you in the kitchen all day!

 

What You Need to Make White Chocolate Berries

You’ll need 2 cups of Ghirardelli White chocolate, a package of strawberries, and homemade royal icing. So easy!

For the royal icing, you’ll need 2 egg whites, 1/2 tsp cream of tartar, 1 tsp vanilla extract, 2 – 3 C powdered sugar, the colors you want to use.

We used pink, purple, and yellow gel colors for these chocolate berries.

How To Make These Chocolate Berries

After you wash and rinse strawberries, give them plenty of time to dry or dry each one thoroughly with a paper towel.

Once berries are dry, melt chocolate in a double boiler.

Dip berries into chocolate and place on a wax paper-lined baking sheet.

Set aside to dry

How to Make Royal Icing

Combine all the ingredients in a stand-up mixer.

If icing is too thin, add in more powdered sugar and beat until stiff white peaks form.

Separate into 3 bowls and add in your colors.

Scoop colors into 3 piping bags with #2 tips.

How to Decorate the Berries

Once chocolate strawberries are dry, take a color of your first choice and drizzle over the strawberries.

Repeat with other colors. Let dry for 30 minutes before eating. Aren’t they gorgeous?
