    Pineapple Mojito Cupcakes

    These pineapple mojito cupcakes are such a fun treat. I can't resist cupcakes, and when they are filled with the flavors of pineapple mojito? Oh.My.Word.

    These pineapple mojito cupcakes are the perfect dessert for your next party! Can you imagine walking in to a party with this dessert? Everyone will forget the rest of the food!

    What Goes Into These Cupcakes

    Key Ingredients

    Pineapple Juice - the sweet flavor of the tropics!

    Lime Juice - gives us that tartness in the mojito.

    Mint- no mojito is complete without the refreshing flavor of mint!

    These pineapple mojito cupcakes are the perfect dessert for your next party! Can you imagine walking in to a party with this dessert? Everyone will forget the rest of the food!

    How to Make Mojito Cupcakes

    Pre-heat oven to 350°F.

    In a bowl mix together flour, salt and baking powder.

    Use another bowl whisk together the buttermilk, pineapple juice.

    In a third bowl cream butter and sugar until light and fluffy.

    Add eggs and vanilla extract to the bowl with the butter and beat until well incorporated.

    Add the butter mixture to the bowl with the buttermilk and mix until well incorporated.

    Add half of buttermilk mix with half of the flour mix and beat until combined.

    Place the batter in the cupcake liners filling ¾ full.

    Bake for about 18 minutes.

    Prepare frosting while cupcakes cool to room temp.

    How to Make Frosting

    Beat butter for 2 minutes on medium speed.

    Add in powdered sugar until thick.

    Add lime juice and mint extract and mix together.

    Pipe buttercream onto cooled cupcakes.

    Add fresh mint leaf to garnish.

    Ingredients

    Cupcakes

    • 5 cup powdered sugar
    • ¼ cup Lime juice fresh squeezed
    • 1 tablespoon Mint extract

    Instructions
