It’s a super easy recipe calling for 5 simple ingredients, making it the perfect cocktail for last-minute guests.

Key Ingredients:
- Fresh mint leaves: Mint is the key to really good classic mojito flavors.
- Simple syrup: The little bit of extra sweetness helps to balance out the tangy lime juice and the fresh mint.
- White rum: The best watermelon mojitos always use light rum. Dark rum just does not work with the watermelon flavor quite as well.
- Fresh lime juice: I always recommend juicing fresh limes. It tastes much better than bottled.
- Club soda: Gives the cocktails the perfect little bit of fizz.

How to Make this Recipe
Step 1: Place a sprig of mint and simple syrup in the shaker and press down with a muddler to release the juice from the mint.
Step 2: Add 1 cup watermelon cubes to the muddled mint and gently muddle again.
Step 3: Add light rum, lime juice. Place ice cubes into the glass and stir or use a cocktail shaker and strainer.
Step 4: Pour into glasses filled halfway with ice.
Garnish each fresh watermelon mojito with lime slices and optional sprig of mint.
Variations
- Watermelon Basil Mojito: Not a fan of mint? I’ve got you! Muddle 5-6 fresh basil leaves in place of the mint. You can also omit any of the green stuff if you prefer.
- Honey Watermelon Mojito: Instead of using simple syrup, you can use about a tablespoon of organic honey. The honey, mint and juicy watermelon give these cocktails a wonderful flavor. Just be sure to give it a really good shake to ensure the honey isn’t settling on the bottom of the cocktail shakers.
- Watermelon Cucumber Mojitos: Add even more summer flavors to this watermelon mint mojito recipe by muddling in a couple of thin slices of peeled fresh cucumber.
- No Added Sugar: Want to use less added sugar in your cocktail recipe? The good news is that if you use a really ripe watermelon, you don’t have to add any sweetener to these cocktails at all. You can also swap out soda water or any sparkling water for the club soda.
- Batch Mojitos: If you’re serving a crowd, these are great cocktails to make in a batch. Simply multiply the number of servings you need and make it in a large pitcher!

These mojitos are best when served freshly shaken. That’s because fresh watermelon puree, when stored in the fridge, will start to separate. You can precut the watermelon cubes and make the simple syrup in advance which will save you some time.
While you can buy premade simple syrup, it is so easy to make your own. Take one-part boiling water and add one-part white granulated or superfine sugar. Continue to boil until the sugar dissolves completely.
Let the syrup cool to room temperature before using. Store in the refrigerator. preferably in a glass container for up to 3 weeks.
Top Tips
- Use cold ingredients. Nobody likes a room-temperature cocktail, so chill all the prepped ingredients in the refrigerator until you’re ready to make them. Chill the glasses in the freezer, too, as this helps keep the drink cooler for longer.
- Don’t muddle the mint sprigs too far in advance because the longer it sits, the stronger it gets, and it can become bitter-tasting
- You don’t have to rush out and buy a cocktail muddler if you don’t have one. You can use the back of a wooden spoon and press the ingredients against the side of the shaker or glass.
- If you don’t have simple syrup and you’re not up to making your own, the next best thing is agave nectar. You’ll use the same amount as you would the simple syrup.
- Need a shortcut? You can buy watermelon in the produce department at the grocery store that has already been cut up into chunks. Plus, this is a great way to have just the amount of watermelon you need without having to buy a whole one.
- If you want a super smooth consistency without any of the small watermelon bits, you can add your seedless watermelon chunks to a food processor. Then strain the blended watermelon through a fine mesh sieve.
