Broccoli Salad Recipe
I don’t know why I don’t make this broccoli salad recipe more often. Whenever I’m at a party and there’s a bowl of broccoli salad, I go back for seconds every time.
This version is a little different than most because we’ve added in cauliflower and blueberries, making this meal even more antioxidant-rich. When I find a recipe that is healthy and delicious, it’s a win!
Broccoli is not only rich in fiber, but it’s also high in vitamin C, vitamin K, B6, iron, and potassium. I really try to get most of my nutrients from food instead of supplements, and this broccoli salad recipe is so good, even your kids will love it!
Be sure to cook the bacon so it’s really crispy because when you add it to the salad, it’s going to soften up a little. If it’s really crisp, it will still be delicious the next day (if there’s any left!)
What You Need to Make It
You will need fresh broccoli, cauliflower, bacon, blueberries, red onion, and Colby Jack cheese to make the salad. Check for signs that broccoli is going bad because it will ruin all your hard work if it’s not fresh enough.
For the oh-so-delicious-dressing, you will need fat-free Greek yogurt, light mayo, honey, red wine vinegar, Stevia, and sea salt.Â
How to Make Broccoli Salad
In a small bowl, combine all the dressing ingredients.
Mix with a whisk until smooth and set aside in the fridge.
Using a large mixing bowl, combine all of the salad ingredients.
Drizzle the dressing over the broccoli salad and mix until evenly coated.
Place salad into the fridge for an hour or until ready to serve.
Toss the broccoli salad again before serving.
