Air Fryer Twice Baked Potatoes

These air fryer twice baked potatoes turn out perfectly every time. The skin is crispy and crunchy and the insides are creamy and cheesy. The best thing about this recipe is the prep time is minimal. Most of the time you’ll spend making these potatoes will be cooking them in the air fryer.

Air Fryer Twice Baked Potatoes

These crispy potato skins and cheesy filling are the perfect addition to dinner. The best part is that this is an easy recipe using simple ingredients! So don’t sleep on this air-fried fluffy, twice-baked potato. It is an easy side dish that can be made all year round and is a fantastic, easy air-fried recipe for beginners.

Recipe Ingredients

With just a handful of ingredients, these will be baking in the air fryer while you’re getting the rest of the meal ready.

  • grated cheddar

  • curd cheese (with herbs)
  • sour cream

How to Make Twice Baked Potatoes

Before you begin, wash the potatoes well, give them a few pokes with a fork, and bake them in the oven or air fryer. To bake, just place the whole scrubbed potatoes in the oven or air fryer for 45 minutes at 360F. Be sure to turn the potatoes halfway through. They should be easy to pierce with a wooden skewer. Carefully cut each potato into halves.

Carefully scoop out the potato from each half and add to a medium bowl.

Add sour cream, half the cheddar, cream cheese, and salt and pepper to the potatoes.

Fill each potato half with the potato mixture and place in the basket of the air fryer. Bake the potatoes for another 8 minutes.

In a small bowl, combine the remaining cheese with the bacon crumbles.

Once the potatoes are done, the tops will be lightly fried, giving them a delightful crunch.

Add the grated cheese and bacon mixture to the tops of each potato.

Fry in the air for another 2 or 3 minutes.

We like to serve these twice-baked potatoes sprinkled with green onions. On the side, serve extra sour cream and bacon.

Tips & Variations

  • For each halved potato, leave a small border of flesh around the potato skins so the stuffed potatoes hold their shape. 
  • The cooking time will vary depending on the size of the potatoes. For crispy skin, cook for a bit longer. 
  • A potato masher works great for mashing the potatoes, but you can also use a large bowl and hand mixer for a quick mix. 
  • Try making this with sweet potatoes instead of russet potatoes for a twist in flavor. 
  • You can add any of your favorite toppings like sour cream, a splash of hot sauce, ranch dressing, etc. 
  • You can use any cheese you like. Monterey jack, pepper jack, and sharp cheddar cheese all work well. 
  • Sprinkle onion powder, garlic powder, seasoned salt, or even creole seasoning over the creamy mashed potatoes to enhance the flavor of the filling even more. 
  • Use Greek yogurt to replace sour cream for added protein. 
  • To make the potatoes even heartier, consider topping them with this slow cooker chili, pulled pork, or shredded chicken.
  • Add cooked broccoli to the potatoes for added nutrients and flavor.

How to Serve Air Fryer Twice Baked Potatoes

This potato recipe is a delicious side dish that pairs well with pulled pork, sloppy joes, baked chicken thighs, and more. This classic side dish can pair well with a fancy dinner or casual weeknight meal. 

You can also serve them as a main dish, making them the star of the evening. You could add a salad next to these air-fried potatoes.

Storing Leftovers

Place your potatoes in a single layer in an airtight container and store them in the fridge for up to 4 days. Then, when you are ready to eat, warm them in the microwave for a quick reheat. You can also place potato halves in the air fryer basket and heat until the potatoes are fully warmed, about 5-8 minutes. 

The other option is freezing your potatoes. I recommend not placing toppings like sour cream on top, which will not thaw well. Place your potatoes in a freezer container and freeze for 2-3 months. Then, thaw in the fridge overnight, or place them right in the air fryer from frozen and reheat until they are warmed all the way through.

Top Tips

Make sure you allow the air fryer to preheat before adding potatoes.

Ensure the potatoes are fully cooked and somewhat cooled before you try to remove the potato flesh from the potatoes for the filling. 

For the best flavor and consistency, shred your own cheese. Packaged shredded cheese has additives that prevent it from melting well and will not taste as good as freshly shredded cheese.
