Before you begin, wash the potatoes well, give them a few pokes with a fork, and bake them in the oven or air fryer. To bake, just place the whole scrubbed potatoes in the oven or air fryer for 45 minutes at 360F. Be sure to turn the potatoes halfway through. They should be easy to pierce with a wooden skewer. Carefully cut each potato into halves.
Carefully scoop out the potato from each half and add to a medium bowl.
Add sour cream, half the cheddar, cream cheese, and salt and pepper to the potatoes.
Fill each potato half with the potato mixture and place in the basket of the air fryer. Bake the potatoes for another 8 minutes.
In a small bowl, combine the remaining cheese with the bacon crumbles.
Once the potatoes are done, you'll see the tops of the potatoes will be lightly fried, giving them a delightful crunch.
Add the grated cheese and bacon mixture to the tops of each potato.
Fry in the air for another 2 or 3 minutes.
We like to serve these twice baked potatoes sprinkled with green onions. Serve extra sour cream and bacon on the side.
