These savory mini tarts will need to be refrigerated in an airtight container or in plastic wrap for up to 3 days. Most can be frozen as well, but check each recipe for details.
Actually, you don't! You can use phyllo or even biscuit dough in a mini muffin pan, too. I like the fluted edges in a tart pan, but you don't need to use tart molds. A couple of these tarts are made with dough using a cookie cutter.
Working with Phyllo dough can be frustrating once it gets to room temperature. It's best to keep it cold, taking pieces out as you're making each group of tarts.
