- Red curry-very popular in Thai food. It’s made with red chili peppers to give it deep rich flavor, vibrant red color and a kick of heat.
- Yellow curry-along with yellow chili peppers, turmeric is the main ingredient that gives yellow curry the signature yellow color. This type of curry is somewhat sweet and with less heat than red curry.
- Green curry-the most popular curry found in Thai recipes – green chilies, cilantro, kaffir, lime leaf, and basil are often ground together to make green curry.

- Shop fresh: Always use fresh ingredients like ginger, garlic, and herbs when you can. Shop in an Asian grocery store if possible!
- Coconut milk: Many authentic Thai recipes call for coconut milk. Choose the type you find in refrigerated section of your grocery store. It’s delicious and healthier than the canned version. Try it especially if you’re watching your calories!
- Taste as you go: Most Thai dishes will suggest adding fish sauce instead of salt. If you’re worried about a dish being too spicy, this is a good way to find the perfect heat, too. Taste and add!
- Tame the spice: If you end up with a dish that is a little too spicy for your personal tastes, try sprinkling fresh lime juice over it. The tanginess in the fruit helps to tone down the heat without diluting the other flavors in the dish.
