A simple recipe of a little olive oil, fresh herbs, garlic powder or your favorite spice rub, lemon juice or lime juice, along with salt and fresh black pepper, always works well. Still, there are a few things you should always keep in mind when cooking fish in general.
- Fish should have a mild scent and not smell overly fishy.
- Frozen fish is okay. It’s usually flash frozen, so it may be fresher than fresh, which has probably been on ice for at least a couple of days.
- Make sure fish is dry when adding seasoning. Take the extra time to apply a paper towel to absorb any moisture.
- With a fish like tilapia, don’t marinate it for more than 30 minutes, if at all.
- It’s a good idea to line the baking sheet with aluminum foil or parchment paper for easy clean-up.
- Wrapping fish in parchment paper is a great technique for fish as it doesn’t dry out while baking.
- Make sure to cook fish in a preheated oven. This seals in moisture and prevents the fish from having a mushy texture.
