This is the perfect summertime treat for family cookouts and get-togethers! These delicious cookies taste like key lime pie in cookie form. They are sweet and crumbly, with just a bit of zing.

Why This Recipe Works

You will adore these thick cookies if you love a good mixture of sweet and tart. The cookie base combines brown sugar, vanilla, and graham cracker to make a sugared crumb cookie. The decadent filling is simply cream cheese, sweetened condensed milk, and zesty lime. 

The condensed milk and rich cream cheese combined with the tartness from the lime is a perfect balance.  This luscious filling is spooned onto the cookie to create a perfect symphony of sour and sweet. Top it with a lime slice and sprinkle it with graham cracker crumbs.

Key Ingredients

Graham crackers – sweet, honey crackers give these cookies flavor and texture.

Key Lime juice and zest – rounds out the flavors with some zing.

Cream cheese – gives you that decadent creamy filling.

You will obviously need a cookie or baking sheet and parchment paper to line the sheet. You’ll be using two large bowls and measuring spoons (my favorites!) as well as a hand or stand mixer. A large cookie scooper is helpful in making sure the cookies are all the same size.

How to Make the Cookies

Step 1: Preheat the oven to 350° Fahrenheit.

Step 2: Line a cookie sheet with parchment paper and set it aside.

Step 3: Using an electric mixer or a stand mixer, cream the room temperature butter, granulated sugar, and brown sugar until light and fluffy.

Step 4: Next, add the egg and vanilla extract.

Mix well while scraping the sides of the bowl.

Step 5: Add the dry ingredients to the wet ingredients by sifting in the all-purpose flour, salt, baking soda, baking powder, and cornstarch. Mix until it just comes together (be sure not to overmix).

Step 6: Form a dough ball using a large cookie scoop (this one is 3 tbsp.)

Step 7: Roll the dough into the crushed graham crackers and place them on prepared baking sheets at least ½ inch apart.

Step 8: Press down on the center of the cookie dough balls with a measuring spoon.

Step 9: Bake for 10 minutes.

Step 10: Remove the soft cookies from the oven and press down on the warm center with a ¼ measuring cup. Return to the oven for 3 more minutes.

Step11: Remove from the oven and let the cookies cool completely.

How to Make the Filling

Step 1: While the cookies are cooling, make the Key Lime Crumbl Cookies recipe for the filling.

Step 2: Combine condensed milk, 3 tbsp powdered sugar (if it’s too runny add one more), and 1 teaspoon Key lime juice.

Step 3: Using a standing mixer or an electric mixer, beat the cream cheese until smooth. Do NOT skip this step, or the cream cheese will be lumpy. 

Step 4: Gradually add the milk mixture to the cream cheese. Add lime zest if you’d like.

Note: the filling should not be runny; it should be thick enough to stay in the center of the cookies. 

How to Assemble

Step 1: Scoop the filling into the well of the cookies using a tablespoon, or if you’d rather, you can use a piping bag.

Step 2: Place the cookies in the refrigerator for 45 to 60 min, just until they’re set.

Step 3: For extra deliciousness, top each cookie with whipped cream (your favorite recipe) and some of the graham cracker crumbs and a Key lime slice when you’re ready to serve. (Optional)

Variations

You can add a little more lime juice and zest to this Key Lime Crumbl cookie recipe if you prefer a stronger lime flavor. Top the buttery cookies off with a small dollop of whipped cream!

Instructions

To Make Cookies

  • Add in the egg and vanilla and mix completely.
  • Next sift in all purpose flour, salt, baking soda, baking powder and cornstarch.
  • Mix until it just comes together.
  • Using a large (3 tbsp) cookie scooper, form a ball of dough.
  • Roll dough in the crushed graham cracker
  • Place on baking sheet, press down the center with a tbsp measuring spoon
  • Bake for 10 mins
  • Remove from oven, press down on the center with a ¼ cup measuring cup
  • Return to the oven for 3 min
  • Remove and let cool fully.
