Coco Chanel says, “I only drink champagne on two occasions: when I’m in love and when I’m not.” Mixing the bubbles with cider gives it an autumn vibe and the flavor is so good! Of course, you can switch out all kinds of things for cider.
We love this pink mimosa and our very popular cranberry mimosa, too. And for a fancy event, this classic French 75 cocktail is always a winner.
For a party, set up an area on the counter with bubbles and cider, sugar-rimmed glasses, and you’re set. I’d add a few fall leaves or other fall decor pieces just to make it festive. You can even do this at a tailgate!

- Apple cider: The perfect fall mixer.
- Bubbles: Either prosecco or champagne
- Brown sugar: For the rim
- Corn syrup: For the rim

How to Make a Mimosa with Apple Cider
Step 1: To rim the champagne flute; add the brown sugar and corn syrup to two saucers.
Lightly dip the rim of the glass in the corn syrup, ensuring the entire rim is covered. Next, dip the rim into the brown sugar. Set the champagne glass or flute aside.
Step 2: Carefully add the fresh apple cider to the champagne flute.
Step 3: Top the cider with Prosecco (or any kind of champagne you prefer), filling it just below the sugared rim. This would be great for a Thanksgiving brunch or fall brunch with a handful of guests.
Serve immediately. You can optionally add a slice of apple to the rim, but cut a slice into the apple so it slides easily onto the rim. You don’t want the juices to ruin your pretty rim.
Variations and substitutions
You can add a white or colored sugar rim to make these cider mimosas fit a special occasion or use the colors of the holiday season.
Add a splash of Grand Marnier or Aperol into your glass for a sweet twist and pop of color.
