This Peach Smoothie recipe with pineapple is all natural, sweetened with honey and fruit, but it tastes like a decadent dessert!

  • 2 Peaches Pitted and cubed. You can leave the skin on or take it off.
  • 2 cups Pineapple Skinned, cubed
  • 1 cup coconut milk In the dairy section. Not canned!
  • 1 cup crushed ice
  • ½ cup shredded coconut
  • ½ cup chia seeds
  • 2 tablespoons of honey preferably local!
  • ¼ teaspoon vanilla extract

  • Sprinkle shredded coconut over a sheet of in foil, and bake at 350º for about 5 minutes, stirring occasionally so it doesn't burn.
  • Remove the pit and cube the peaches.
  • Cube 2 cups of pineapple, removing skin. Reserve a couple of slices for garnish.
  • Place peaches, pineapple, coconut milk, ice, honey and vanilla into a blender and blend until creamy.
  • Thicken the smoothie by mixing in chia seeds and let it sit for around 3 minutes before giving it one more quick blend.
  • Pour in a tall glass and top with toasted coconut and a pineapple slice for garnish. Makes 4 servings.

Notes

Almond milk can be used in place of coconut milk.
Be sure to let the blender run for a couple of minutes so the smoothie is creamy and not icy.
This recipe is vegan. For the Daniel Fast, leave out the honey. 
You can double the peaches and leave out the pineapple if you prefer. Switch up fruits in the same quantities to try other flavors!
