Ingredients
- 4 Peaches Pitted and cubed. You can leave the skin on or take it off.
- 2 cups Pineapple Skinned, cubed
- 1 cup coconut milk In the dairy section. Not canned!
- 1 cup crushed ice
- ½ cup chia seeds
- 2 tablespoons of honey preferably local!
- 4 sprigs fresh mint optional for garnish
Instructions
Remove the pit and cube the peaches. Reserve 4 slices for garnish.
Cube 2 cups of pineapple, removing skin.
Place peaches, pineapple, coconut milk, chia seeds, honey, and ice into a blender and run until smooth.
Pour in a tall glass and top with a peach slice and sprig of fresh mint for garnish. Makes 4 servings.
Almond milk can be used in place of coconut milk.
If you don't like the texture of chia seeds, they will soften up if you place them in water or juice for an hour or so.
Be sure to let the blender run for a couple of minutes so the smoothie is creamy and not icy.
This recipe is vegan. For the Daniel Fast, leave out the honey.
You can double the peaches and leave out the pineapple if you prefer. Switch up fruits in the same quantities to try other flavors!
