Ingredients
For Cake
- 1 box white cake mix
- 1 can red cream soda
For Frosting
- 2 cups powdered sugar
- 1/2 C stick unsalted butter
- 8 oz cream cheese softened
- 1 tsp vanilla
Directions
Preheat oven to 350º
In a large bowl, combine cake mix and cream soda with an electric mixer on low speed until you have a smooth cake batter.
Pour batter into a lined cupcake tin 3/4 of the way full.
Bake for 15 minutes.
Remove cupcakes and allow them to cool at least 30 minutes before frosting.
Put all the frosting ingredients into a bowl.
Mix on medium speed until smooth.
If it seems runny, place in the freezer for about 15 minutes.
Frost cupcakes as you usually would, or use a decorating kit for really beautiful desserts.
Cut colorful bendable straws in half and stick one in each cupcake. So cute!
You could add fruit to these cupcakes to give them even more flavor. It's best to add thawed or fresh fruit as the baking time is so short. You could also add a couple of tablespoons of fruit preserves to add more sweetness, especially if you're using soda water. You can also use any flavor of cake mixes.
You can, of course, make your own homemade cupcakes instead of using a box. This is the perfect recipe when you forgot you said you'd make something for that party! Keep the ingredients on hand in your pantry and you'll only need to pick up butter and cream cheese!
