Blend on high just until smoooth. Overblending can make the drink taste watered down.
Pour mixture into tall glasses.
Serve right away.
Notes
Use only the best and freshest ingredients.Gin: For the best flavor, use a good-quality gin. Some gins have very strong botanical flavors that can overpower the sweetness in this drink. We used Tanqueray, which is perfect for a sweeter cocktail.Fresh Lemon Juice: Use fresh lemon juice for this frozen raspberry gin and tonic. Bottled lemon juice just does not do it justice.Chill Your Glasses: Nothing will ruin a frozen drink more than a warm glass. For best results, place your glasses in the freezer for about 15 minutes before making this drink. Chilling the glasses helps keep this frosty drink colder for longer.Simple Syrup: Don’t have simple syrup? It’s easy to make by just dissolving equal parts sugar and water over low heat. You’ll want to let it cool completely before using. In fact, make it a day ahead if you can. Taste and add until the sweetness is to your preference.Blending Time: You’ll want to blend this cocktail just until it’s smooth. If you blend for too long, it can cause the ice to melt which will dilute the cocktail.Garnish: We always like to garnish our cocktails, though it’s completely optional. Fresh raspberries, a slice of lemon, or a sprig of mint work well.
