In a large mixing bowl, add flour, salt and yeast. Combine well with a whisk.
Add water, stirring until a sticky dough forms. Add the shredded cheddar cheese and stir until it's thoroughly mixed into the dough.
Cover the dough with a clean dishtowel and allow it to rest overnight or for about 12-18 hours.
Place an empty Dutch oven pan in the oven and preheat the oven to 450º F.
On a smooth, lightly floured surface, roll the dough until it forms a ball.
Once the oven has reached 450 degrees, carefully remove the Dutch oven and place the bread dough into it, covering it with a lid.
Place the Dutch oven in the oven and bake the bread for 30 minutes.
Remove the lid from the Dutch oven and let the bread bake for an additional 15-20 minutes to get that golden brown crust.
