- 6-7 chicken thighs bone in, skin on (2 lb | 906 g)
- ½ teaspoon sea salt
- ½ teaspoon ground black pepper
- 1 ½ tablespoons vegetable oil
- 3 garlic cloves minced
- 1 large mango peeled and sliced
Honey Sauce
- ½ cup honey 4.22 fluid oz | 125 ml
- 1 tablespoon soy sauce
- 1 tablespoon red chili flakes
Season chicken with salt and pepper on both sides.
Heat a nonstick skillet on medium high heat with oil. Sear chicken thighs for 4-5 minutes on each side. Make sure the chicken is cooked though. Chicken thighs with bones take a long time to cook. Be careful with the hot oil.*
In a small bowl, combine honey, soy sauce and chili flakes. Switch the heat to medium low. Pour on the chicken and stir.
Add mango and garlic around the chicken thighs. Cook for 2 minutes.
Remove, garnish with cilantro and serve.
Store in the refrigerator in an airtight container for up to 5 days.
Allow to cool down and freeze in an airtight container for 1 month.
Either way, heat in the microwave until heated through to keep the chicken from drying out.
