This easy Blueberry Galette is a delicious dessert made with a sweet and juicy blueberry filling tucked into a rustic, flakey pie crust.

- 1 butter crust 12 inch
- 18 oz fresh blueberries 500 g
- 5 ¾ teaspoons sugar 25 g
- 3 tablespoons cornstarch
- 1 tablespoon lemon juice
- 1 ¾ oz chopped almond 50 g, or halved
- 1 egg
Preheat the oven to 356 F | 180 C. Arrange the crust on a parchment paper.
In a medium bowl, combine blueberry, sugar, cornstarch and lemon juice. Add the mix in the middle of the crust.
Close the edge and brush with egg wash. Sprinkle almonds around on the crust edge. You can sprinkle brown sugar if you like it.
Bake in the middle of the oven for 30 minutes. Remove and allow to cool down.
Cut and serve.
If blueberries are not in season, you can use frozen ones.
If you use frozen, make sure to drain them the best you can before adding them to the crust. This prevents a soggy crust.
Make sure you allow the filling to cool slightly first to prevent it from being too runny when you slice the galette. Cooling it allows the cornstarch to bind with the fruit juices, which helps firm it up.
Store in the refrigerator in an airtight container for up to 5 days.
