Chinese Mandarin Chicken

This Chinese Mandarin Chicken recipe creates juicy and tender chicken thighs with mandarin and chili. It's a delicious sweet and sour weeknight dinner for the ones who like it spicy, but you can eliminate the heat by leaving it out.

Ingredients

  • 1 ½ lb chicken breast or chicken thighs skinless, boneless (680 g)
  • ¼ teaspoon sea salt
  • ¼ teaspoon ground black pepper
  • 1 tablespoon soy sauce
  • 1 tablespoon cornstarch
  • 1 ½ teaspoons vegetable oil
  • cup dried red chili chopped
  • 1 teaspoon minced garlic
  • 1 ½ teaspoons ginger
  • 2 medium mandarin oranges peeled
  • 2 tablespoons honey
  • ¼ cup chicken broth 2.02 fluid oz | 60 ml

Instructions

  • Cut chicken in chunks ½ inch and season with salt, pepper and soy sauce. Sprinkle cornstarch on it and toss.
  • Heat a heavy pan or wok with oil on medium-high heat. Sear chicken for 4 minutes. Add chili, garlic and ginger. Stir all together.
  • Now turn heat to medium and add mandarin, honey and chicken broth. Stir and cook for 1 minute.
  • Remove. Garnish and serve with rice.

Notes

This recipe doesn't make a lot of extra sauce, so if you want enough to spoon over the rice, consider doubling the sauce ingredients.
If you have leftover dried red chilis, don't throw them out. They can be ground into a powder using a spice grinder and stored in a jar for later use.
Cut the chicken into pieces as close to the same size as you can. This will help them cook evenly in the same amount of time.
