Buffalo Chicken Meatballs
Spicy buffalo chicken meatballs are always a popular appetizer for a tailgate gathering or cocktail party. We like to serve these with a bowl of extra sauce for dipping.

- 1 lb ground chicken
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1 large egg
- ¼ cup chopped green onions plus more for serving
- ½ teaspoon salt
- 1/2 teaspoon freshly ground black pepper
- 1/3 cup buffalo sauce plus more for serving
- ½ cup panko bread crumbs
Preheat oven to 400º F.
Add chicken, onion powder, garlic powder, egg, green onions, salt, black pepper, buffalo sauce, and bread crumbs to a large bowl. Gently mix together until well combined.
Using your hands, form golf ball sized meatballs.
Place meatballs on a prepared baking sheet.
Using a pastry brush, lightly coat the meatballs with oil.
Bake meatballs for 20 -25 minutes.
Once you've removed meatballs from the oven, drizzle them with buffalo sauce and gently stir to coat them with sauce.
Serve with small forks or toothpicks and extra sauce on the side. Optional: serve with a dish of blue cheese dressing.
Be careful not to overcook these chicken buffalo meatballs as they may turn out tough if cooked too long.
Chicken meatballs can be stored in an airtight container for 5 days in the refrigerator. You can also freeze these meatballs for about 4 months. Let cool before freezing.
