Key Lime Crumbl Cookie Recipe

Equipment

  • 1 Parchment paper sheet
  • 2 Large bowls
  • 1 Hand or Stand Mixer
  • 1 set Measuring spoons
  • 1 Large cookie scooper

Ingredients

For the Cookies

  • ½ cup unsalted butter 1 stick, room temperature
  • cup granulated sugar
  • cup brown sugar room temperature
  • 1 egg room temperature
  • 1 teaspoon vanilla extract
  • cup all-purpose flour scooped and leveled
  • ¼ teaspoon cornstarch
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon kosher salt
  • 4 graham crackers crushed

Cookie filling

  • 4 ounces cream cheese
  • 4 ounces sweetened condensed milk
  • ¼ cup Key lime juice 
  • 3 tablespoons powdered sugar add another if needed
  • 2 teaspoons Key lime zest optional

Instructions

To Make Cookies

  • Preheat the oven to 350
  • Line a baking sheet with parchment paper and set aside
  • Cream together butter and both sugars until light and fluffy.
  • Add in the egg and vanilla and mix completely.
  • Next sift in all purpose flour, salt, baking soda, baking powder and cornstarch.
  • Mix until it just comes together.
  • Using a large (3 tbsp) cookie scooper, form a ball of dough.
  • Roll dough in the crushed graham cracker
  • Place on baking sheet, press down the center with a tbsp measuring spoon
  • Bake for 10 mins
  • Remove from oven, press down on the center with a ¼ cup measuring cup
  • Return to the oven for 3 min
  • Remove and let cool fully.

To Make Filling

  • While the cookies are baking make the filling.
  • Combine condensed milk, 3 tbsp powdered sugar (if it’s too runny add one more), and 1 teaspoon lime juice.
  • Beat the cream cheese until smooth – do not skip this or it will be lumpy.
  • Gradually add the milk mixture to the cream cheese. Add lime zest if you'd like.
  • Filling should NOT be runny.
  • Scoop into the well of the cookies.
  • Refrigerate until set (45min-60min)
  • For extra deliciousness, top each cookie with whipped cream (your favorite recipe), a sprinkle of graham cracker crumbs, and a lime slice when you're ready to serve. (Optional)

Notes

The best way to make the well for the filling is to press down lightly with a measuring spoon or the bottom of a glass. Be sure to make the wells while the cookies are still warm or they may crack.
While you can use any limes available, you will get the best flavor from using key limes. If you choose to use key limes, make sure you buy at least a few because it’s harder to get the juice from them. 
The recipe yields eight large cookies, but you could easily make 16 small cookies. Use a tablespoon scoop to make the centers instead of the cookie scooper for best results. Also, reduce the bake time to 7 minutes.
