Harry Potter Butterbeer Cupcakes

Ingredients

Cupcake Ingredients

  • 2 C flour
  • 1 C sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 12 oz Cream soda 1 can
  • 3.4 oz butterscotch pudding 1 package

Frosting Ingredients

  • 2 C powdered sugar
  • 1/2 C unsalted butter
  • 2 T heavy whipping cream
  • 3 T butterscotch sauce

Instructions

To Make the Butterbeer Cupcakes

  • Preheat oven to 350 degrees.
  • Line cupcake pan with liners
  • Blend the flour, sugar, baking powder, and salt.
  • Mix the above ingredients with the bottle of cream soda and beat until thoroughly blended.
  • Add the box of pudding and stir well.
  • Pour the batter into the lined cupcake pan until 3/4 full.
  • Bake at 350 degrees for 15-20 minutes.
  • Check to see if cupcakes are done by inserting a toothpick. If it comes out clean then the cupcakes are done.
  • Allow cupcakes to cool for at least 30 minutes before frosting.

How to Make Frosting

  • Mix butter with powdered sugar until small pebbles appear.
  • Add whipping cream and beat slowly.
  • Check to see if frosting will make and hold a stiff peak. If not add additional 1/2 C powdered sugar and mix.
  • You are going for stiff peaks, so if not there yet, continue to add powdered sugar until it stiff peaks form.
  • Frost with a pastry bag and tip.
  • Drizzle with butterscotch sauce.
