Autumn Harvest Soup
A delicious and hearty soup made with ground turkey, veggies, and beans. Super easy to make, your family will love it.
- 2 lbs ground turkey
- 2 C red onion, diced
- 2 C celery including leaves, diced
- 6 C butternut squash cubed
- 6 C fresh kale chopped
- 15 oz great northern beans drained and rinsed
- 1 1/2 T garlic minced
- 1 T fresh ginger minced
- 64 oz vegetable broth
- 2 tsp dried thyme
- 2 tsp dried basil
- 1 tsp cumin
- 3/4 tsp sea salt
- 1/2 tsp ground pepper
SauteƩ turkey, onion, celery, garlic, and ginger in a large soup pot until onion and celery are soft.
Add broth, butternut squash, kale, and beans.
After 3 minutes, add thyme, basil, and cumin.
Bring to a boil.
Cover pot and reduce heat to low, simmering for 30 minutes.
Season with freshly ground salt and pepper.
