Halloween Brownie Bites

These Halloween Brownie Bites are always a big hit, and they are super easy to make.

Ingredients

Brownies

  • 2 C sugar
  • 1 C butter unsalted, melted
  • ½ C cocoa powder
  • 1 teaspoon vanilla
  • 4 eggs room temperature
  • 1 ½ C flour
  • ½ teaspoon baking powder
  • ½ teaspoon salt

For the Icing

  • 2 egg whites
  • 1 C powdered sugar
  • ½ teaspoon cream of tartar
  • Green gel food coloring

Decorations

  • candy pumpkins
  • tombstones

Instructions

To make the Brownies

  • Preheat oven to 350 degrees. Spray the baking dish with nonstick spray.
  • Pour melted butter into a bowl.
  • Stir in the sugar and cocoa.
  • Add the vanilla and eggs and stir well.
  • Combine the flour, baking powder, and salt. Whisk together.
  • Add the flour mixture to the other ingredients and stir well.
  • Bake at 350 degrees for 20-30 minutes or until an inserted toothpick comes out clean.
  • Allow brownies to cool before cutting into bars.

Making the Icing

  • Combine all ingredients except food coloring in a mixing bowl, mixing on medium speed for 4 minutes. 
  • If icing is not stiff enough add powdered sugar until it is thick. (up to about ¼ cup)
  • Spoon the icing into a bowl.
  • Add several drops of green gel food coloring in the large bowl of icing and stir well to mix the color.

Decorating the Brownies

  • Using the green icing cover a corner of the brownie to look like grass.
  • Place a candy tombstone in the center of the back of the brownie.
  • Add a candy pumpkin on the plot of icing grass.

Notes

When cutting these Halloween Brownie Bites, a plastic knife often works best as the brownies don't stick as much to the plastic.
