Fresh Peach Salsa
What could be better at a cookout or party than fresh peach salsa? It doesn't matter what's on the table, I gravitate towards the chips and salsa. Any kind of salsa will do! I even like hot and spicy, but my kids don't, so I decided to make something we all would enjoy, and this peach and cucumber salsa is amazing.

Servings: 2 cups
- 2 cups peaches chopped
- 1 cup cucumber chopped
- 1/4 cup red pepper chopped
- 1/4 cup cilantro chopped
- 2 T apricot jam
- 2 T lime juice
- Generous pinch of salt and pepper
Cut peaches in half and remove pit.
Chop into medium pieces.
Chop cucumber into medium pieces.
Chop red pepper into small pieces.
Add all to a medium size bowl.
Mix in jam and lime juice.
Add salt and pepper.
Stir well to combine.
Fresh peaches are absolutely best, but frozen or canned are okay in a pinch.
