Oven Baked Greek Chicken Thighs Recipe

These delicious oven baked Greek chicken thighs are exploding with flavors of the Mediterranean.

Ingredients

  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 6 chicken thighs boneless, skin on
  • ½ teaspoon sea salt
  • ½ teaspoon ground black pepper
  • 1 tablespoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Juice of 2 lemons plus the squeezed lemon

Instructions

  • Preheat the oven to 395 F | 200 C.
  • Add oil and butter in an ovenproof skillet and heat on medium.
  • Season chicken with salt, pepper, garlic powder, onion powder and paprika.
  • Sear chicken briefly in the skillet. Remove from the stove.
  • Squeeze lemon juice on the chicken and add the squeezed lemon around the chicken in the skillet.
  • Transfer in the oven and bake for 20-25 minutes in the lemon juice.
  • Remove, garnish with parsley and serve with your favorite side dish.

Notes

When prepping the thighs for seasoning, blot them with a paper towel to remove any moisture. This ensures the seasonings stick, and it also helps you get that nice golden brown, crispy skin.
Let the chicken rest when it comes out of the oven. This relaxes the meat, allowing all the juices to redistribute.
When baking bone-in chicken thighs, always place them in the oven skin side up. This allows the skin to crisp up and turn golden.
A minute or two under the broiler will help to get that crispy skin, but be sure to keep an eye on the chicken so it doesn't burn.
