Watermelon Mojito

Ingredients

  • 1 cup watermelon cubed
  • sprig mint
  • ½ ounce simple syrup
  • 2 ounces rum
  • ¾ ounce fresh lime juice
  • 2 ounces soda
  • lime wheel garnish
  • mint garnish

Instructions

  • Place mint and simple syrup in shaker and press down with a muddler to release juice from mint.
  • Add 1 cup watermelon chunks. Gently muddle again.
  • Add rum, lime juice, and ice. Shake.
  • Pour into glasses filled halfway with ice.
  • Garnish with lime.

Notes

Use cold ingredients. Nobody likes a room temp cocktail, so chill all the prepped ingredients in the refrigerator until you’re ready to make them. Chill the glasses in the freezer, too! It helps keep the drink cooler longer.
You really shouldn't muddle the mint in advance as it can become bitter tasting.
If you don't have simple syrup and not up to making your own, the next best thing is agave nectar. You'll use the same amount as you would the simple syrup.
For a shortcut, buy already sliced watermelon in the produce department or even purchase watermelon juice if you can find it.
