- 4 cooked chicken breasts chopped, in bite-sized pieces
- 5 cups fat-free chicken broth
- 5.5 oz can black-eyed peas
- 7.75 oz can chickpeas
- 2 cups crushed tomatoes
- 1 cup spinach
- 2 cups carrots
- 2 cups white potatoes
- 1 1/4 tsp cumin
- 1/2 tsp turmeric
Bring the broth, tomatoes, carrots, cumin, and turmeric to a boil in a large covered saucepan.
Add black-eyed peas and chickpeas.
Add potatoes.
Reduce the heat and simmer, covered, until the carrots and potatoes are tender, about 10 minutes.
Add the cooked chicken and heat through, about 1 minute.
Add spinach and remove from the heat, cover, and let stand the spinach wilts, about 5 minutes.
