Moroccan Chicken Soup

Ingredients

  • 4 cooked chicken breasts chopped, in bite-sized pieces
  • 5 cups fat-free chicken broth
  • 5.5 oz can black-eyed peas
  • 7.75 oz can chickpeas
  • 2 cups crushed tomatoes
  • 1 cup spinach
  • 2 cups carrots
  • 2 cups white potatoes
  • 1 1/4 tsp cumin
  • 1/2 tsp turmeric

Instructions

  • Bring the broth, tomatoes, carrots, cumin, and turmeric to a boil in a large covered saucepan.
  • Add black-eyed peas and chickpeas.
  • Add potatoes.
  • Reduce the heat and simmer, covered, until the carrots and potatoes are tender, about 10 minutes.
  • Add the cooked chicken and heat through, about 1 minute.
  • Add spinach and remove from the heat, cover, and let stand the spinach wilts, about 5 minutes.
