Baked Blueberry Oatmeal

A delicious and super healthy breakfast, this baked oatmeal with blueberries is about to make your life easier and mornings more fun!

Ingredients

  • 2 C rolled oats
  • 1 C fresh blueberries
  • ½ C pecans
  • ¼ C dried cranberries
  • ¼ C chopped dates
  • ¼ C dried mulberries
  • 2 C coconut milk
  • ½ t salt

Instructions

  • Preheat the oven to 350º.
  • Lightly grease an 8 by 8 baking dish.
  • Add all the ingredients to the dish. Mix well.
  • Press down on the ingredients so they soak up the coconut milk. Leave to soak for 20 minutes.
  • Gently stir before placing it in a preheated oven for 40 minutes.
  • Check after 30 minutes as oven temperatures vary. I like to get a little crisp on the top.
  • Serve as is or with your favorite toppings.
