Harry Potter Butterbeer Cupcakes
Delicious cupcakes with the flavors of Butterbeer!
- 2 C flour
- 1 C sugar
- 2 tsp baking powder
- ½ tsp salt
- 12 oz Cream soda 1 can
- 3.4 oz butterscotch pudding 1 package
- 2 C powdered sugar
- ½ C unsalted butter
- 2 T heavy whipping cream
- 3 T butterscotch sauce
To Make the Butterbeer Cupcakes
Preheat oven to 350 degrees.
Line cupcake pan with liners
Blend the flour, sugar, baking powder, and salt.
Mix the above ingredients with the bottle of cream soda and beat until thoroughly blended.
Add the box of pudding and stir well.
Pour the batter into the lined cupcake pan until ¾ full.
Bake at 350 degrees for 15-20 minutes.
Check to see if cupcakes are done by inserting a toothpick. If it comes out clean then the cupcakes are done.
Allow cupcakes to cool for at least 30 minutes before frosting.
How to Make Frosting
Mix butter with powdered sugar until small pebbles appear.
Add whipping cream and beat slowly.
Check to see if frosting will make and hold a stiff peak. If not add additional ½ C powdered sugar and mix.
You are going for stiff peaks, so if not there yet, continue to add powdered sugar until it stiff peaks form.
Frost with a pastry bag and tip.
Drizzle with butterscotch sauce.
