Avocado Black Bean & Tomato Bisque

This soup is perfect for a weeknight meal, but makes a nice presentation to serve to guests, too. It's healthy, filling, and bursting with flavor!

Ingredients

  • 2 Cups Chicken Broth
  • 2 Tomatoes medium
  • 1/4 C Cilantro
  • 1 Garlic Clove or 2 to taste
  • 1/2 Avocado peeled
  • 1/2 Lemon juiced
  • 15 oz Black Beans
  • Salt and Pepper to taste.
  • Toppings Suggestions – Plain Yogurt Tortilla Chips (crushed), Hot Sauce, Chopped - Onions, Red or Orange Bell Peppers, Cilantro.

Instructions

  • Wash all your fruits and veggies.
  • Quarter the tomatoes.
  • Peel avocado and garlic clove.
  • Juice the lemon.
  • Rinse the black beans.
  • In the your food processor or blender, place the chicken broth, tomatoes, avocado, garlic clove(s), lemon or lime juice and 1/2 the can of black beans.
  • Blend well.
  • Save the rest of the beans to put in the soup after it has been blended and heated.
  • If you have a Vitamix, which I use, place the above ingredients in it, set to "hot soup," and let cycle complete. Otherwise, you will simply heat the soup on the stove after getting it nice and smooth in the blender or processor.
  • Pour into individual serving bowls.
  • Top with warmed black beans.
  • Add sprig of cilantro and enjoy.
