Fresh Peach Salsa

What could be better at a cookout or party than fresh peach salsa? It doesn't matter what's on the table, I gravitate towards the chips and salsa. Any kind of salsa will do! I even like hot and spicy, but my kids don't, so I decided to make something we all would enjoy, and this peach and cucumber salsa is amazing.

Servings: 2 cups

Ingredients

  • 2 cups peaches chopped
  • 1 cup cucumber chopped
  • 1/4 cup red pepper chopped
  • 1/4 cup cilantro chopped
  • 2 T apricot jam
  • 2 T lime juice
  • Generous pinch of salt and pepper

Instructions

  • Cut peaches in half and remove pit.
  • Chop into medium pieces.
  • Chop cucumber into medium pieces.
  • Chop red pepper into small pieces.
  • Add all to a medium size bowl.
  • Mix in jam and lime juice.
  • Add salt and pepper.
  • Stir well to combine.

Notes

Fresh peaches are absolutely best, but frozen or canned are okay in a pinch.
