No Bake Cookie Dough Bites

These no bake cookie dough bites were made for Valentine's Day, but once you know how to make this sweet treat, you can decorate them for any holiday or celebration!

Ingredients

  • 4 ounces low-fat cream cheese
  • 2 tablespoons pure maple syrup
  • 1 teaspoon pure vanilla extract
  • 1 ¼ cups flour all-purpose
  • 1 cup white chocolate chips
  • ½ teaspoon coconut oil

Instructions

  • Heat treat the flour by either spreading it on a baking sheet in a preheated oven at 350º for 5 minutes or sticking it in the microwave in a glass bowl for on high for 60 seconds.
    Let it fully cool before using, and sift through it with a fork to make sure no clumps formed while heating.
  • Soften cream cheese in a microwave-safe bowl for 15 to 20 seconds on medium power until creamy.
  • Add maple syrup and vanilla and stir until creamy and smooth.
  • Add the flour in a little bit at a time and stir to incorporate.
  • Scoop evenly sized balls onto a parchment-lined sheet using a 4 cm cookie scooper.
  • Let the cookie dough bites fully set 15-20 min in the fridge or 30 mins at room temp.
  • Melt the white chocolate in 15 second increments in microwave until creamy.

  • If the chocolate does not seem thin enough to dip, add coconut oil and stir well.
  • Dip the cookie dough bites into the chocolate using a fork. Shake off any extra chocolate.

  • Add sprinkles and place dough bites back on a parchment-lined baking sheet. Let the bites dry before moving them.
  • Chill for 30 minutes in the refrigerator.

Notes

Chilling the dough is a step you can't skip! The cream cheese dough will be sticky and too hard to work with if it isn't cold. You can also leave the cookie bites in the fridge overnight and finish the bites the next day.
When melting the chocolate, do it in 15 second increments and stir in between. If you rush and try to do it faster, you may end up with a mess you can’t use. (I speak from experience!)
The coconut oil helps thin the white chocolate and makes it easier for dipping. You can use other oils like vegetable or canola, but we prefer coconut oil as it’s solid when cold and will set faster. It will not change the flavor at all.
This recipe makes just 9 bites which we think is perfect for a family treat. Feel free to double or triple the batch for a gathering.
