    I can't imagine a better way to watch that big orange ball slide below the horizon than with a Sunset Cocktail in hand. I had this cocktail for the first time in Cabo when staying at Pueblo Bonito Pacifica Golf & Spa Resort, an adults-only Cabo San Lucas all-inclusive property just 20 miles from the San Jose International airport.

    I can't imagine a better way to watch that big orange ball slide below the horizon than with a Martini Sunset Cocktail in hand.

    This all-inclusive is part of Quivira Resorts where you will not only find the adults-only resort but also Pueblo Bonito Sunset Beach Golf & Spa Resort, a family resort. While staying at either resort, you'll have access to the 23 restaurants and 12 bars. It was while I was visiting the Pueblo Bonito Sunset Beach Golf & Spa Resort that I discovered this cocktail at The After.

    Watching the bartender make the Sunset Cocktail, I was immediately intrigued as I love carrot juice. For some strange reason, I never thought of making a cocktail using carrots! I was excited when he was willing to share the recipe with me.

    Sunset Cocktail

    This Sunset Cocktail is love at first sip! I can't wait for you to try it. If you don't like a little spice, skip the Tajin seasoning around the rim. I like spice so I laid it on thick! Salt would also work well.

    This cocktail is so delicious, you are going to want to make it every weekend!

    Ingredients

    • 1 oz vodka
    • 1 oz Grand Marnier
    • ¼ teaspoon lime juice
    • ½ T agave honey
    • ½ cup carrot juice
    • 1 T Tanjin spice

    Instructions

    • To begin, sprinkle enough of the Tajin on a plate for however many cocktails you're making.
    • Rub the rim of a chilled martini glass with a lime.
    • Simply mix all ingredients in a shaker with ice. Make sure to shake long enough that the cocktail is really chilled, but not too long as it will become watered down.
    • Pour into glass and enjoy cold.

    How easy is that? You can get fancy with a cocktail carrot or a slice of carrot on a cocktail toothpick as I did here. This set of cocktail toothpicks is adorable and would be perfect!

    Carrot juice has a whole host of benefits, like beta-carotene and Vitamin A. You can use the bottled variety or fresh. I can tell you the fresh juice is out of this world - and better for you!
