These pretty green cupcakes are just too cute and so delicious. Think Thin Mints in a cupcake! As I've said before, cupcakes are my favorite dessert, and if it's an easy recipe, even better!
We're calling these shamrock shake cupcakes because they look so festive as a St. Patrick's Day dessert. The green cupcake liners and green straws give this dessert a fun theme.
Using this same recipe, you could totally change up the color and make these Valentine's Day or Christmas cupcakes, too.
Though these cupcakes are perfect for St. Patrick's Day, they are adorable for any time of year.
Make these cupcakes to give your family an unexpected surprise!
What You Need to Make these Green Cupcakes
For the green cupcakes, you will need flour, sugar, baking powder, sea salt, unsalted butter, eggs, milk, vanilla, mint extract, and green food coloring.
To make the frosting, you'll need unsalted butter, powdered sugar, heavy cream, mint extract, and chocolate fudge sauce.
Preheat oven to 350 degrees and line a cupcake tin with St. Patricks day themed cupcake liners
In a standing mixer or large bowl, combine dry ingredients with the butter and mix together on low speed for a minute or two.
Add eggs, one at a time, and continue to mix on low speed until combined before adding other egg.
Gradually add in the mint extract, vanilla, and milk and mix until all combined.
Add in a few drops of the color and mix. Add in a few more to get the color that you want.
Fill cupcake liners about ¾ of the way and bake in the oven for 21 minutes. When done, set aside.
How to Make the Frosting
Combine all ingredients in a standing mixer bowl or use a handheld mixer.
If the frosting looks like rocks add more heavy cream. If too thin, add more powdered sugar.
Top each green cupcake with frosting and drizzle with chocolate sauce and garnish with a straw.

Cupcakes are my grown daughter's favorite dessert too so I need to share this recipe with her. They are pretty and I love the green. We usually have Irish rice pudding for dessert on Saint Patrick's day but maybe I will surprise my husband with a batch of these! Thanks for sharing the recipe with your readers.
