No-Bake Oatmeal Peanut Butter Bars

These No-Bake Oatmeal Peanut Butter Bars are the perfect pick-me-up snack for a long day. The kids will love it with a tall glass of milk in the afternoon, and they are delicious with a cup of hot tea, as well.

These No-Bake Oatmeal Peanut Butter Bars are one of my favorite combinations, and I love not having to heat up the kitchen on hot summer days.

The best part? No bake! Who else likes easy? In addition, I live in Florida and don’t want to put my oven on unless I have to.

Oatmeal Peanut Butter Bars

Peanut butter and oatmeal are one of my favorite combinations, and being able to whip up a dessert without having to heat up the kitchen is great for hot summer days.

These No-Bake Oatmeal Peanut Butter Bars are one of my favorite combinations, and I love not having to heat up the kitchen on hot summer days.

What You Need for Oatmeal Peanut Butter Bars

You’ll need coconut oil, unsalted butter, peanut butter (creamy or chunky- you decide), brown sugar, graham cracker crumbs, quick oats, milk chocolate chips, and coconut. 

Tools needed: 1 medium-sized bowl, electric mixer, parchment paper, and two 8 x 8 square pans

How to Make Oatmeal Peanut Butter Bars

In a medium bowl, add coconut oil (if it’s still in its solid form, make sure to microwave it for a few seconds), butter, and peanut butter, and using your electric mixer, mix until you reach a creamy consistency (even if you’re using chunky peanut butter). You’ll find that your mixture will glisten and shine.

Add brown sugar and mix until well combined. Next, add graham cracker crumbs and quick oats and fold in with all other ingredients.

Line both square pans with parchment paper and pour in your mixture. Make sure to spread it evenly so that both pans have layers of the mixture at about 1/2 of an inch thick.

Melt chocolate chips in either a double boiler or in the microwave. Drizzle the melted chocolate onto the layer of your peanut butter mixture and then sprinkle coconut flakes on top.

Cover each pan with plastic wrap and chill in the refrigerator for at least 1.5 – 2 hours. Slice into 12 bars, for a total of 24 bars from 2 pans.

These No-Bake Oatmeal Peanut Butter Bars are one of my favorite combinations, and I love not having to heat up the kitchen on hot summer days.

**Alternative: You can chill the peanut butter layer for an hour, and then spread your melted chocolate over on top. Once the chocolate is evenly spread, sprinkle on your coconut flakes and chill in the refrigerator for another hour. It’s all in personal preferences for aesthetics! In any case: same great recipe and same great taste!

Yields: 24 bars (about 1” x 2” in size)
