I am always trying new breakfast casserole ideas because I head up a group that brings breakfast to our worship team at church. As the team is there for so many hours on Sunday, I like to make sure they have fresh fruit and some sort of dish with eggs.

Making breakfast for a crowd just doesn’t get easier than this! If you’re cooking for just your family, one will probably be plenty. I made three of these so I could take two to church and leave one at home for my family.

The second thing I learned is that when I have a recipe that calls for dry mustard, regular old dry mustard will never do again. The flavor of Colman’s Mustard is so unique, and I want my recipes to have that flavor!

How to Make this Casserole

Ingredients

You’ll need eggs, sage sausage, milk, sourdough bread, cheddar cheese, dry Colman’s Mustard, salt and pepper. So easy!

Directions

Brown sausage and drain well. Set aside.

Whisk eggs until foamy.

Add milk, Colman’s Mustard, salt and pepper.

Stir well.

Gently fold in bread, making sure all is combined.

Add sausage and cheese. Stir well.

Cover bowl and refrigerate overnight.

Preheat oven to 350º.

Pour into greased 9 by 11-inch pan.

Bake for 45-50 minutes. When a knife inserted in middle comes out clean, it’s done!

  • 8 eggs
  • 1 pound Sage sausage
  • 2 1/2 cups milk
  • 6 slices sourdough bread cubed
  • 1 cup shredded cheddar cheese
  • 1 tsp dry Colman’s Mustard
  • 1 tsp salt
  • 1/2 tsp pepper

  • Brown sausage and drain well. Set aside.

  • Add milk, Colman’s Mustard, salt and pepper.
  • Stir well.
  • Gently fold in bread, making sure all is combined.
  • Add sausage and cheese. Stir well.
  • Cover bowl and refrigerate overnight.
  • Preheat oven to 350º.
  • Pour into greased 9 by 11 inch pan.
  • Bake for 45-50 minutes. When a knife inserted in middle comes out clean, it’s done!
