I am always trying new breakfast casserole ideas because I head up a group that brings breakfast to our worship team at church. As the team is there for so many hours on Sunday, I like to make sure they have fresh fruit and some sort of dish with eggs.
I love this breakfast casserole recipe because I can make it the night before and pop it in the oven in the morning and let it cook while I’m showering. Making breakfast for a crowd just doesn’t get easier than this! If you’re cooking for just your family, one will probably be plenty. I made three of these so I could take two to church and leave one at home for my family.
One of the ingredients in this might surprise you. It calls for dry mustard. And when a recipe calls for dry mustard, you should always think Colman’s Mustard. When I was at the Fancy Food Show in New York in June, I had the chance to chat with the folks from Colman’s Mustard and try a few recipes they had created. I learned two things; first, I was surprised at the ways they used dry mustard. In chili? Delicious!
To rim the glass for a bloody Mary? Brilliant!
To spice up a dip for chips and pretzels? So yummy!
The second thing I learned is that when I have a recipe that calls for dry mustard, regular old dry mustard will never do again. The flavor of Colman’s Mustard is so unique, and I want my recipes to have that flavor!
Of course, Colman’s Mustard also comes prepared, so you can have that delicious flavor on sandwiches, too!

Easy Breakfast Casserole
1 pound Sage sausage
2 1/2 cups milk
6 slices sourdough bread, cubed
1 cup shredded cheddar cheese
1 tsp dry Colman’s Mustard
1 tsp salt
1/2 tsp pepper
Brown sausage and drain well. Set aside.
Whisk eggs until foamy.
Add milk, Colman’s Mustard, salt and pepper.
Gently fold in bread, making sure all is combined.
Add sausage and cheese. Stir well.
Cover bowl and refrigerate overnight.
Preheat oven to 350º.
Pour into greased 9 by 11 inch pan.
Bake for 45-50 minutes. When a knife inserted in middle comes out clean, it’s done!
My family loved this casserole and I’ve shared it with the rest of the breakfast team so they can make it, too. It’s so easy, and everyone said it was delicious!
